Blistered Corn Summer Salad
In this heat, it sure feels like corn and tomato season are being dragged earlier.
The tomatoes right now are good, not prime, but good - the same goes for the corn. This preparation gives them that extra zing they need to shine in the first week of July, even though it feels like August. I often ask myself, “what is cooking?” I know that the food I love is made of in-season produce which is treated minimally. That’s this recipe, and man is it good.
