A coconut curry is a wonderful thing, creamy, clean flavorful. This is based on a Thai red curry, which is nothing like an Indian or Japanese curry. If you’ve never tried Thai curry, this is a perfect place to start, it’s bright and creamy, a little spicy and very warming. When you fall in love with this, you can take things to the next level buy making your own curry base. Simply grind together ginger, onions, spices, hot peppers, kaffir lime leaves and/or lemongrass. It’s wonderful if you can source all of these ingredients easily. However, red and green curry pastes are now sold in glass jars almost everywhere, and it makes for a really quick dinner (the glass jars are great because you can keep the unused paste for months longer in the fridge). So after an enormous amount of eating meat and fish in a never ending blur of space and time over this past week, the red curry and root veg is a sigh of relief and a delicious change of direction.
