Most good Italian-Americans have made the feast of the seven fishes. Many won’t admit what a pain it is. It’s certainly too much for one person to to take on, but achievable when there’s a functioning team. But let’s be honest; the holidays are about the worst time to try and wrangle everyone to work, especially if the only time they do kitchen work is in December. So I present the feast of 3 fishes, two of which are room temp antipasti, allowing the feast to commence once the branzini are ready. These dishes are aromatic, different and easy - I hope you enjoy them!
