Ziti with Eggplant, Cinnamon and Sage
As an answer to the "what is this weather?" question, I've taken a peak summer dish and added winter warming herbs and spices.

Each of us are experiencing a different climate situation, but here in the U.S. Northeast, it’s 75ºF and nearly November. What to eat is the question? Long slow roasts certainly feel too heavy to commence and yet, summer dishes are way over. Yesterday, as I stood in my kitchen, nearly in a state of sweat from the greenhouse effect and the ambient temperature. I said to myself “let’s embrace a Sicilian summertime dish, but with flavors of winter”. That is what this is, it’s delicious, it’s fast and maybe cooking will be more of a “one foot in each bucket” seasonal approach as our climate continues to change.
